Behind the scenes, I must have made at least half a dozen renditions of cookie cake in order to find my perfect cookie cake recipe. I am happy to report that I was able to tweak my recipe and come up with my absolutely favorite version of cookie cake! I ended up announcing this for my 38th birthday! I was so happy to bring cookie cake to my menu. And as of about a year later, I have sold dozens of cookie cakes! (I say about a year because my birthday is coming up this week!). Custom cookie cakes have been a huge seller for me and I absolutely love creating them!

I mostly make double layer number cookie cakes such as this, but I also create rounds and rectangles. Cookie cake is still one of my absolute favorite deserts and i never get tired of having some extra cookie cake scraps in the house! Over the past year, my piping skills have continued to improve and i am really happy with a few of the cakes I have made recently that were totally out of my confort zone.
